If you haven’t caught the latest video on our FOGO Charcoal YouTube channel, you’re in for a treat! This time, Kaitlyn, better known as Kickin Kate’s BBQ, took the reins once again, serving up a seriously mouthwatering dish – bacon-wrapped dill pickle spears on the Big Green Egg. 

This dish brings together an irresistible combination of flavors. Start with the tangy crunch of dill pickle spears, wrap them in smoky, crispy bacon, and then take it to the next level with a sprinkle of Grill Girl Robyn's Sunshine State of Mind BBQ rub. This rub adds a beautiful citrusy and peppery kick that complements the pickles perfectly. But Kaitlyn didn’t stop there. She brushed on a generous helping of Old Town BBQ Sauce as a finishing touch, infusing each bite with layers of sweet, tangy goodness.

The magic of this dish doesn’t end with the crispy bacon and perfectly grilled pickles. Kaitlyn whipped up a delicious, tangy dipping sauce that took these bacon-wrapped beauties over the top. This sauce, with its creamy texture and bite, provided the perfect complement to the smoky, charred goodness coming off the grill.

Directions:

  1. Fill your grill with FOGO Premium Charcoal and prepare for indirect grilling at 350°. Place 2 fire starters into a Blazaball and lay it on the charcoal.  Light it, add more charcoal on top and place the deflector plate and grate in.  Allow the grill to heat to 350° while preparing the pickles.
  2. Dry off each pickle slice. Wrap each pickle slice with ne slice of bacon.  Start and finish so the end of each slice of bacon is underneath the pickle.  This will prevent the bacon from unraveling.  Sprinkle each wrapped pickle with Grill Girls Sunshine State of Mind rub and set aside.  Continue until you are done wrapping pickles.
  3. Once they are all wrapped, set them on the grate. Allow them to cook until the bacon is beginning to get crispy.  Once it is getting there, use the basting brush to coat each pickle slice with BBQ Sauce.  Allow them to cook for approximately 15 more minutes and remove from the grill to cool.
  4. While the pickles are cooking, prepare your dipping sauce. Combine all ingredients and whisk together until fully blended.  Place the sauce in the refrigerator.  This step can be done a day ahead of time.  The longer it sits, the more the flavors meld together.
  5. Serve the pickles with the dipping sauce and watch everyone’s eyes light up as they taste these salty and delicious treats.
