This hearty smoked tomato soup is perfect for the cold winter nights. The char-grilled tomatoes enhance the flavor of this classic soup and kick it up a notch!

Directions:

  1. Light your grill and set it for about 225 degrees with indirect heat. You can add some wood to smoke the tomatoes. Apple wood is a nice mild flavor for this dish.

  2. Slice tomatoes in half, place them on a tray cut side up and smoke tomatoes on the grill for about 30 minutes or until they are tender.

  3. Remove the tomatoes and let them sit on the counter for about 10 minutes to cool. De-seed and peel the tomatoes using a spoon and small knife. The skin should slide off easily.  Put the flesh of the tomato in the blender and add the tomato puree, black pepper, and garlic. Blend this until smooth.

  4. Place your dutch oven or pot on the grill and pour the tomato puree into the pot. Once it starts to simmer, add the cream and butter and stir well.

  5. Simmer this for about 10 minutes, then add the basil. Tear up the basil into smaller pieces and save a few full leaves for presentation.

  6. Serve hot with sliced bread and a few basil leaves on top. Enjoy!
