Directions
1. MarinadeMix together ¼ cup freshly squeezed lemon juice, ¼ cup of olive oil, 3 cloves of minced garlic, 1 tsp kosher salt, and 1 tsp black pepper into a small bowl. Pour marinade over the salmon fillets in a plastic container. Cover and refrigerate for 1 hour.
Make the tarragon sauce by removing the leaves of fresh tarragon and chopping them up. You will need about 2 tsp of the chopped herbs. Zest ½ a lemon and add it to the bowl along with the lemon juice, buttermilk, sugar, salt, and sour cream. Stir well, cover, and refrigerate until the Salmon is cooked.
3. Grilling
Cook the salmon skin side down on a raised grid at 325 degrees with direct heat until the internal temperature of the fish is 145 degrees and flakes apart. It is always a nice trick when the skin sticks to the grates and the fillet of fish should come off perfectly into your spatula.
Drizzle the sauce on the plate, place the fish on top, and have a few slices of lemon on the side. The extra sauce can be placed on the table for anyone wanting a little extra. Enjoy!
