In this mouthwatering episode, Tina prepares succulent Cornish game hens with a rich cherry glaze, all cooked to perfection on the Big Green Egg MiniMax.

These Cornish game hens were cooked using an indirect setup on the Big Green Egg MiniMax, fueled by FOGO All-Natural Coconut Shell Briquets. Directions:
- Remove the game hens from their packaging and pat them dry, inside and out. Place them on the work surface of the BBQ Prep Tub. Sprinkle the cavity with salt and lay some thyme and 3-4 garlic cloves inside. Next, rub the outside with some EVOO and sprinkle with Tina Cannon’s European Blend seasoning. Now, grab a Game Hen Turbo Trusser and truss your game hens. Once all are complete, place them in the refrigerator until they are ready to go on the grill. #ToThe Refrigerator Insert the Meater+ thermometer into the breast and set it for 160°.
- Fill your grill with FOGO All Natural Coconut Shell Briquets. Place two FOGO Fire Starters in the center of the coals and ignite them using your grill torch. Prepare the grill for indirect cooking at 350°.
- Place the hens on the grate, breast side up. Once they have cooked for 20-25 minutes, check on them. Make sure they are cooking evenly and that the bottoms are not burning. If so, simply flip them over using your BBQ Tongs. Continue cooking until done.
- Once they are done, remove them from the grill to a platter and loosely tent them with foil.

Place a pan or small cast iron sauce pot on the grate and let it heat up a bit. Add the Cherry Concentrate, sugar and balsamic. Stir until the sugar is fully dissolved. Pour the glaze over the Hens and use the basting brush for an even coat.
- I do not recommend putting them back on the grill as there is a lot of sugar in this glaze and we do not want it to burn.
- If you do want to put them back on, watch them very carefully to prevent burning.
- Serve and enjoy!
