When days get colder, BBQ recipes get hotter. We’ve put a spin on a classic corn casserole and have come up with a loaded easy-to-follow-recipe: Make a hot jalapeño casserole and spice things up! For when you’re looking for something filling, delicious, that you can split and share, this crowd-pleasing casserole will do the trick. Great for sharing, it has everything comfort food requires: Cream, cheese, jalapeño, and corn, too!

Easy to make, completely satisfying
Firstly, get your first ingredient ready and set up your grill for indirect heat at 350 degrees with one small chunk of apple wood. You don’t want to add too much smoke to this dish, but a hint of apple wood will add to the signature flavors of FOGO charcoal grilling. Let it burn, slowly, and start prepping.
Get the rest of your ingredients together and get ready to make one filling, hearty mixture that will later be smoked to perfection, creating a hot and steamy dish. Stir together one can of whole kernel corn, drained; with one can of creamed corn, 1 cup of sour cream, and 1 egg in a small bowl. Finely chop the onion and jalapeños and mix them into the bowl, for an extra kick. Enhance the flavor with spices: Add the garlic powder, paprika, a pinch of salt. Now mix in the melted butter, the corn mix that was set aside in the bowl, and 1 cup of cheese. When all the ingredients have been combined, into a pre-greased 9x9 baking dish. Now you’re ready to start smoking.
Place in a 350-degree smoker and cook for 45-50 min or until the top turns golden and a toothpick comes out clean when poked into the center. Towards the end, you can add some more cheese to the top along with some slices of fresh jalapeno if you’re in the mood for one last tasty layer!

Be sure to check anytime after the first 45 minutes to see how it’s coming along. Once the cheese has melted, you’ll know it is ready. Tale it out and let the casserole rest for about 10-15 minutes before serving so it can set up and won’t be runny. This is a very cheesy casserole, so you can always cut back on the cheese if you want to. There’s always a time to watch what you eat, and moments to indulge in comfort food. Put your feet up and dig in!
